Feta cheese rolls (Flogeres) with Charalambides Christis yoghurt!

Ingredients
To fill the rolls:
- 8 sheets of Chrysi Zymi Puff Pastry for pies
- 200 g. of Charalambides Christis Feta
- 4 sprigs of fresh thyme
- Ground black pepper
- 50 g. of cream cheese
- 15 g. of mustard seed
- 20 g. dairy cream
For the dip:
- 250 g. Pissourkotiko Sheep Yogurt Charalambides Christis
- 70 g. of honey
- 2 g. of smoked paprika
- 40 g. of Florina pepper, finely chopped
- Salt
- Pepper
For the rolling:
- 150 g. of melted butter
For the garnish:
- Basil leaves
Instructions
- Melt the butter in a saucepan and set aside.
- In a large bowl, add the feta cheese, cream cheese, thyme, mustard seed, and cream and beat with a whisk until well combined.
- Open the phyllo pastry sheets on a clean counter. With a brush, spread butter over the entire surface of the first sheet.
- Take 2 tablespoons of the filling and spread it near the beginning part of the sheet, leaving a little space at the edges. Fold the two edges inward and roll to create a flute.
- Leave in the fridge for 10 minutes.
- At the same time prepare the dip.
- Mix the yoghurt with all the other ingredients in a medium bowl. Adjust the taste with salt and pepper.
- Add the cheese rolls to a frying pan on medium heat. Bake on all sides until golden and crispy.
- Garnish the dip with basil leaves and serve.
